Weekly Meal Ideas

Sharing the meals I made this week in hopes of sparking some inspiration. These are simple meals and most recipes are not my own. I will link the recipes I followed below in the post.


For context, I am a newlywed and am learning how to cook meals for my husband and I. We are on a budget, so these are easy and relatively inexpensive meals that anyone can make. I have Celiac's Disease, so I follow a gluten free diet and my husband is a picky eater.

Stuffed Bell Peppers - I had some ground turkey that I wanted to use this week. I didn't use a recipe, but add in some spanish style rice, ground turkey with taco seasoning, cheddar cheese, and some sour cream.


Mozzarella Chicken - This meal was made in the air fryer! Super easy and didn't take that long to prep and bake. I used gluten free breadcrumbs as part of the outside coating to make this gluten free.



Stacked Enchiladas - We love stack enchiladas! This is my husband's favorite dinner. The recipe is from my mother in law!


1lb Hamburger

1 can of cream of chicken

1 can of chili beans

1 can of Rotel

1 pkg of taco mix

Shredded cheddar cheese

Corn tortillas


Brown meat; drain. Add soup, Rotel, taco seasoning and beans to pan. Drain all cans. Spray crockpot with Pam. Layer tortillas, meat mixture and cheese. Finish with cheese on top. Heat until cheese melts.
