Weekly Meal Ideas

Sharing our meals from this week. Both of these recipes were really good and made a large portion size. We were able to eat these through out the whole week.

Poppy Seed Chicken - This is a family recipe that I made gluten free. I used a gluten free cream of chicken and Schar's table crackers.


The recipe is:

3 cups of cooked chicken, chopped

1 10oz. can of cream of chicken soup

1 8oz. carton of sour cream

1 TBSP poppy seeds

1 1/2 cups of crushed crackers

1/3 cup of butter, melted


Combine first 4 ingredients; spoon into a lightly greased 11x7 baking dish. Combine crushed crackers and butter and sprinkle over chicken mixture. Bake, uncovered at 350 degrees for 30 minutes.


Chili Mac - A new recipe for us that we loved. I took the easy way out and used Kraft Gluten Free Mac and Cheese. When I make this in the future I think I will try to make homemade Mac and cheese.
